Late April through early June, and again in September and October, give you warm days, clear skies, and a fraction of the summer crowds. Hotel rates in shoulder season run 30-40% lower than peak July-August, and you can actually get a table for sunset in Oia without booking weeks ahead. Water temperatures stay swimmable through October. If photography is your priority, October's golden light over the caldera is hard to beat.
